this is really difficult to answer, as the types of notes you should be taking depends on what you want out of your notes.
i take note of anything that i think might help me in the future, such as a weird line that a villain took, a hand someone shoved with a certain stack that i think will help me range them later, etc.
as for shorthand, do whatever will help you the best. it's kind of hard to offer tips on shorthand as something that works for me might not helpful for others. i know that there are some notes on my laptop from when friends used it that i can't make any sense of or regard something that i wouldn't find important if it had been me playing.
One thing I do, which i think i actually learned from someone else, is i use a “?” mark on my first note on someone. So for example…lets say a guy 5x raises with JJ.
I'll make a note that says “5x raises JJ from MP?”. and if he does it again I'll simply take the “?” off. Maybe not the best example, but you get the idea. A ? mark means i have not seen it enough to know that it is a solid trend, once the ? is removed then i can assume it with more reliability.
I also definitely make notes on shoving ranges and calling ranges and make sure to note position. “Shoved J9s with 12bbs from the CO” or” Called my 13 BB button shove with KTs in the BB”.
